You will need:
Juice of 1 lemon
Juice of 1 lime
Juice of 2 or 3 oranges (*see how to make fresh squeezed juice!)
1 tbsp white wine vinegar
1 tsp fresh thyme (not dried)
1/2 to 2/3 cup extra virgin olive oil
Squeeze juice from lemon, lime and oranges into blender.
Add the white wine vinegar and thyme and blend on high speed until very smooth.
Turn blender to lowest possible speed and open lid. With lid open, slowly drizzle in extra virgin olive oil and continue blending until mixed thoroughly. Use 1/2 cup of olive oil first, then taste to see if it needs more. Do not use more than 2/3 cup.
Vinaigrette is ready. Will store for at least one week. May separate. If this happens, simply stir before using.
