A good homemade mayonnaise recipe is something every healthy cook should have up their sleeve. You won't believe how much better it tastes than the storebought kind!
Real mayonnaise isn't even white. It's yellow!
I make my mayonnaise recipe using top quality, healthy pasteured eggs with yolks that are a vibrant orange.
Storebought mayonnaise is usually made with cheap, factory-farmed eggs and involves big industrial machines. Manufacturers use the egg whites as well as the yolks to save money and increase the volume. As a result, the mayonnaise you see in grocery stores is white.
A bona fide homemade mayonnaise recipe discards the whites and uses only the yolks. The upgrade in flavor will strike you! Your taste buds will love this healthy mayonnaise recipe!
How to make mayonnaise:
You will need:
4 egg yolks (separated from whites)
Juice of 1/2 lemon
1 tsp dijon mustard
1 tsp white wine vinegar
Extra virgin, cold-pressed olive oil
Place egg yolks, lemon juice, dijon mustard and white wine vinegar into your blender.
Place blender on low setting and leave lid off. While these ingredients are blending, slowly pour in a continuous thin stream of olive oil until the mixture assumes the consistency of mayonnaise (it should be thick). This will be a lot of olive oil.
Once the mixture becomes thick, stop pouring in olive oil and leave it to blend for another minute (this time with lid on).
Ready to eat immediately or can be refrigerated for at least one week.
