The trick with healthy breakfast recipes is SIMPLICITY!
Heavy or complicated dishes with chemical ingredients will sit like a brick in your stomach and will make you tired. You want a tasty but healthy recipe that's going to GIVE you energy, not take it away!
Try having my Sweet Banana Custard for breakfast in place of eggs and toast, or a sugary pastry, and see how much more energy you have!
Sweet Banana Custard ingredients:
You will need:
2 room temperature ripe bananas*
2 frozen bananas (simply peel and stick in your freezer before you go to bed at night. In the morning, voila! Make sure the bananas are fully ripened with lots of brown spots before you freeze them)
2 raw, organic, free-range egg yolks
*Are your bananas ripe? They're ripe when they have plenty of brown spots. They should look this:

Eating fruit only when it's ripe is super important for us healthy eaters because only then are the flavors and the vitamins "unlocked." Remember: eating unripe fruit = indigestion + gas + bland flavor!
Unripe bananas taste and smell starchy, have little flavor and are hard to peel. Ripe bananas smell and taste sweet and they peel easily. |
Directions:
1) Place the egg yolks and the room-temperature bananas in a high speed blender and blend until smooth. DO NOT ADD WATER!!!
2) Add the frozen bananas and blend until VERY smooth and creamy.
3) Optional: add some chopped fresh fruit like strawberries or blueberries!
That's it! Grab a spoon and enjoy!

Now come on, wasn't that super easy? Eating a healthy breakfast recipe can be so simple! Who needs sugary breakfast cereals or fattening pastries? Not us!
To me, this tastes like a combination of custard, pudding and egg nog.
TIP: If you're really in a hurry, you can pour it into a glass, pop in a draw, and drink it as a smoothie!
