Try my easy Egg Salad Sandwich recipe!

My egg salad sandwich recipe couldn't be easier. Sometimes less is more, so why complicate something as delicious as egg salad?

Easy healthy recipes like this one should be minimum on ingredients, and maximum on flavor. A good rule of thumb to live by when shopping for healthy recipes is this: more than a few ingredients means the food is overly processed and not good for you. Steer clear!

A truly healthy egg salad sandwich recipe should never contain chemical preservatives, sugar or unpronounceable ingredients of any kind. Think simple, fresh, and wholesome: what healthy eating is all about!

A 100% healthy Egg Salad Sandwich recipe:

Do you know how to make egg salad? It's actually really simple! This is a perfect lunch to take to work with you, or to even make on the spot in your office kitchen. It only takes 5 minutes!

How to make egg salad:

You will need:

2 hard-boiled eggs

1 tbsp mayonnaise (try my homemade mayonnaise recipe!)

Directions for How to Make Egg Salad:

Remove the peels from the hard boiled eggs. Place them in a bowl with the mayonnaise.

Keep mashing the eggs with a fork and begin whisking the eggs and mayonnaise together:

Making your own mayonnaise is quick and super healthy. However, if you do use store-bought mayonnaise, make sure to buy one that has no sugar, preservatives or mystery ingredients like "natural flavors."

I recommend Canola Mayonnaise by Spectrum Naturals (you can find it in the health food section of most grocery stores):

Look at its ingredients list: Mayonnaise

Compare this to the ingredients list for a standard mayonnaise brand like Hellmann's. You'll see about 50 ingredients, many of them unpronounceable chemicals. Ick!

To make this delicious egg salad sandwich recipe, you will need:

2 large scoops of homemade egg salad

2 thick slices of tomato

2 lettuce leaves (I prefer romaine, red leaf or green leaf)

2 slices of toasted Ezekiel bread or other whole grain bread, toasted*

Directions for making egg salad sandwich recipe:

1) Add a thin layer of mayonnaise on each slice of bread (try my easy homemade mayonnaise recipe!)

2) Place one lettuce leaf and one tomato slice on each slice of bread:

3) Scoop generous amount of egg salad onto each slice. It's ready to eat! You can either leave it as a delicious Open-Faced Egg Salad Sandwich:

Or you can have it as a traditional egg salad sandwich:

Either way this egg salad sandwich recipe is utterly delicious!

*I thought for years I shouldn't eat bread until I discovered Ezekiel bread: Ezekiel bread

Sprouted grains are as fresh and unrefined as you can get. This is REAL BREAD!

Ezekiel bread can be found in many grocery stores and all health food stores. It's kept in the freezer section to prevent spoilage. Frankenfoods with a long shelf life are not foods you want in your body. If you can't pronounce some of the ingredients in a store-bought loaf of bread, or if it's got more than 15 ingredients, don't buy it!

Bonus: Ezekiel bread only has 80 calories per slice. Simply pop it in your toaster and it'll be ready in minutes!
